Meatless Sausage Rolls

This recipe will make a great appetizer for your vegan friends.  It is super delicious and you don’t even miss the actual sausage!


  • 1 package of frozen Puff pastry ( make sure it is made without eggs )

  • 2 packages of Mushrooms ( about 4 cups worth if you grow your own)

  • 1 package firm tofu

  • 1 tablespoon Sage

  • ½ teaspoon Black pepper ( Cayenne pepper if you like it spicy)

  • 1teaspoon salt

  • 1 tablespoon olive oil


  1. Thaw the puff pastry according to the instructions

  2. Place all other ingredients into a food processor and blend until you like the consistency. You can taste this mixture at any time to your liking it shouldn’t be bland, but should be like sausage.

  3. Place mushroom mixture in a greased sheet pan and spread evenly.  Then bake at 350 for about 20 minutes then allow to cool completely. 

  4. Cut the “sausage” into long strips  about an inch wide using a knife or spatula.

  5. Spread out the puff pastry sheets and cut into 3 sections. Place a “link of sausage”  in the middle of each piece and roll the edges over the sausage. Flip so the seam in on the bottom and place on a sheet pan. Repeat the process for all your pastry dough.

  6. Bake according to puff pastry instructions  you can brush with some olive oil if you want it to brown up a little more.
