Carrot Cake


2 cups sugar
1 cup cooking oil
4 eggs
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
3 cups grated carrots
1 cup chopped nuts
1 cup raisins
Mix oil and sugar, add eggs and beat.  Add all other ingredients.  Bake at 350 degrees for one hour.

Cream Cheese Frosting

1 3 oz pkg cream cheese
1 tbsp milk
1 tsp vanilla
2 cups powdered sugar
1 tbsp butter
Beat cream cheese, milk, and vanilla together.  Add powdered sugar and butter.  Beat well and spread over cooled cake.
